For the foodies out there, here’s how you make awesome lemon pancakes!
Throw in a blender the following –
A cup of self-raising flour (I use gluten-free flour)
A cup of porridge oats
A cup of milk
A couple of spoonfuls of lemon curd (or you can add some very ripe bananas for banana pancakes!)
Blend until it’s pourable, Then heat a frying pan, put some oil in, and make the pancakes. They will be quite fluffy and thick due to the self-raising flour.
Add your favourite topping, I like greek yogurt and honey, or berry compote and ice cream.
