Gluten-free Carrot Cake Recipe

At the request of some friends on Facebook, I have decided to post my famous Carrot Cake recipe for you to try yourself. I must admit, it’s just a mixture of two or three recipes I found online (don’t ask me where though, I have no idea) and I have refined it to suit myself, and added gluten-free flour so it doesn’t give me a bad tummy! You could of course use normal flour with it if you wanted to.

Carrot Cake Recipe

Cake mixture:

Mix the following together in a bowl:

275g Sugar (brown or white or a combination)

200ml Sunflower Oil

Add:

4 Eggs

300g Grated Carrots

150g Dried Fruit/Nuts

Mix together:

225g (Gluten free) Self-Raising Flour

1tsp Cinnamon

1tsp Mixed Spice

And add to the rest. Then add:

A few tbsp. of orange juice

Orange Zest

 Bake for 25-30 mins at 180C (depending on oven, depth of tin etc.)

You can put all the mixture in a deep, loose bottom tin, or in two shallow tins and then sandwich together with the frosting.

 Frosting:

Mix together:

150g Cream Cheese

150g Icing Sugar

I must warn you though, this cake is so good, that less than 24 hours later, you will end up with this:

What Does Success Mean to YOU?

Success. It’s a word with a lot of weight attached to it. A lot of feelings and emotions, not all positive ones. When you hear the word – what is your reaction? What does it mean to you? Do you think you’re successful? Do you compare your own successes to others? Do you hate those posts on Facebook, which declare the ‘top 5 things successful people do’ or the ‘10 things successful people never do’? Do you read them and think – if I want to be successful I need to change all my habits – and then feel like you will never be successful because that seems to big a leap to take?

My number one most hated question that people ask me most often as an Indie Author is – How many books have you sold? I hate the question for a number of reasons, but one of them is that I know people are asking so they can determine how successful I am – because they are basing my success on sales numbers and therefore my income. Another reason I hate it is because the answer to that question makes me feel far from being a successful author.

At the same time, I know that I don’t want to ‘success’ to only be linked to how many books I’ve sold and how much money I make, so I realised I needed a new way.

During my conversation with my soul, which I posted on Monday, my soul pointed out that it was up to me to choose what my definition of failure and success were. Intrigued by the idea, I used a method from a TED talk I watched the other day, and decided to get very clear about what my definition of success was.

I went on a bit of a journey, in my bid to discover what success really meant to me, and in doing so, realised that I had created a little process that others may also find useful. I wanted to share the process with you, but instead of simply writing a blog post and posting pictures, for something different, I thought it would be cool to host a google hangout session, and take people through the process step by step, in the way that I created it and discovered my personal definition.

So, having never done this before, I have decided to hold the session on Monday 23rd February, at 8pm UK time. There is an event page on Facebook that has more information, (even if you don’t have a Facebook account, you can still view the page and see all the info you need, such as the link to join in and watch the session, and also what materials you will need to take part), and I will be posting updates there until the event. I won’t be recording the session (too many technical issues) so if you really want to attend the session and cannot make Monday night, do get in touch, because I may host another session if there is demand for it.

Just to make it clear – this is a completely free session, and there will be no selling whatsoever done within the our time together. It is purely and simply going to be me, taking you through the process I went through, to discover what success really means to you. I may ask at the end for feedback on what you discovered from the session, and if it seems like the process works for others, I may then put a video together to post on YouTube.

A Magical Quest

What started off as an ordinary, innocent walk in the woods, turned into a magical quest leading to a hidden treasure.

Having not been sticking to her promise to herself over the previous week, of going for a walk every day, on the Sunday after she turned 31, Michelle decided to get back on track and to go for a walk in the woods. She was alone in the house, and though she was trying to get some work done, she was feeling too sleepy to concentrate, and so decided to get some fresh air.

She wrapped up warm, it was January, after all, and as mild a winter as it had been, there was still a chill in the air. She set off down the driveway, and instead of taking her usual route, she headed in the opposite direction. As she walked down the path, she took in all of the sounds and smells and sights, taking in details that she had not previously noticed. As she made her way down the trail, she decided that the time of talking about and thinking about the past had gone. And that it was time to focus entirely on the present and how that would create her future. After all, the past was done, and she had no desire to live there any more.

At each junction, she opted to take the opposite path to normal, and soon she found herself on a path she had never walked on before, despite having walked through these woods for the previous four and a half years.

Intrigued by the possibility of this new adventure, she continued, and found some new caves, where she thought a wise old wizard may live. Perhaps they would have some words of wisdom for her. But even though she called out greetings, there was no reply.

She moved on, past a majestic Ent, (who was asleep) and found a curious hole in the ground, and wondered if there might be a helpful hobbit there, perhaps bearing some cheese and crackers or some jolly music, but alas, no one was home there either.

She continued along, and found she was heading for the river, the sound of which grew louder and louder. It appeared to be flowing quite fiercely, due to the rains they’d had, she supposed. In the middle of her path, she came across a shaman’s feather. Its black and white stripes reminded her that there was light in darkness, and that duality was needed in life, despite it being difficult to endure the darkness at times. It also reminded her that there was an inbetween, where things weren’t black or white, but a bit fuzzy and grey. And that’s okay too.

She silently thanked the shaman, for leaving her the message, and continued further down the hill, a little daydream running through her mind as she carefully descended the slippery, rocky path.

Still unsure as to what her next step should be, in her wonderfully crazy and haphazard life, she was thrilled to find that though the wizard and the hobbit had not been home, the pirates had left her a treasure map! She couldn’t fail to find what was hidden now.

She eagerly read the map and then followed the trail to the river, and found a deserted beach, the water lapping onto the shore. She remembered all the many times she had spent at the ocean, and how it always reminded her of the expansive nature of the universe. Standing on the shore, looking out to sea, would always bring home to her that she was merely a drop in the ocean, part of the whole, connected to all of life.

She continued on, past a beautiful tree with roots like celtic knots, reminding her of her heritage, of her ancestors. Though she had resolved to not dwell on the past, she thanked them now, for all they had learnt and passed on to her.

She found a very hospitable stone, at the waters’ edge, and sat upon it. It occurred to her that it must have belonged to the house she had seen on the treasure map, that had once stood where she now sat by the water. She sat in silence for a while. Her eyes drifted closed and she listened to the sound of the water, listened to her own thoughts, to the ideas that were drifting about in her head. She opened her eyes after a while, and watched the water as it hit the shore then rippled back, and a little poem came to mind, so she wrote it down:

She watched the water for a while, then thanking the river for its wisdom, she stood up and decided to make her way back. As she went up the trail, she thought about how she had been trying for some time to find a way to prove to herself that she was committed to her life, to her mission, having realised a few months before, that she hadn’t been up until then. She had been trying to devise a ritual of some kind, or to create something, or to purchase something to show her commitment, but she had not been able to decide on what it should be. She didn’t know what this kind of commitment looked like, having not experienced it before. She stopped on the path and looked towards the river, and spotted a heart-shaped patch of moss on a tree. She instantly knew that it was a message for her dear friend, and so captured an image of it to share with her, once her quest was over.

A quest! That was one idea she’d had of proving her commitment. To go on a quest by herself. But had this not been a quest? What had started out so simply, as a way to get some fresh air and exercise, had turned into so much more. As she made her way back up the hill, she looked up at the trees, dark against the white cloudiness of the sky, and it hit her again, the fact that everything was connected.

She realised in that moment, that she didn’t need a special ritual, or a symbol or to create anything to make her commitments, she could do it right there and then, with the trees, the river, the rocks and the sky as her witnesses, she could state them out loud, and so they would be done.

As she climbed the slippery, rocky hill, she began to speak out loud:

I, Michelle Louise Gordon, am committed to my life. To loving myself, loving my body. To taking care of myself, my soul and my body. I am committed to my purpose and my mission here on this earth, and I will do whatever it takes to ensure I complete what I came here to do. And so, I commit to helping others. I commit to inspiring others. I commit to helping others to heal. I commit to my own growth and evolution. I commit to assisting my friends and family and those who seek me out to become their best selves, and to follow their own missions too. I am committed to everything that my soul has in store for me. And so it is.

By now, she had reached the caves again, and as she looked toward them, she realised that the wizard had indeed had some wise advice for her, but she had not been open to it until now:

She knew that the wizard meant there was a danger of her forgetting her commitments, especially with her terrible memory, and that she would need to find a way not to forget the magic of her quest. She thanked the wizard, and continued up the hill. When she had nearly reached home again, she took off her gloves and scarf, having got too warm, and pulled the bobble from her hair, allowing it to fall freely. Without realising, she had wrapped the bobble twice around her ring finger, and she smiled when she saw it. In that unthinking act, she had sealed her commitment to herself. Once she arrived home from her quest, she pulled off her boots, and went inside to make a cup of tea.

It was clear in that moment, as she watched the steam rise from the silver spout, that the only way she could make absolutely sure that her commitment would not be forgotten, would be to share it with the world. So, cup of tea in hand, she sat at her computer, and began to write.

 

New Author Photos

Today my sister came to visit me. For those who don’t know her, she is the awesomely talented graphic designer who created my beautiful Visionary Collection covers, the back covers for the Earth Angel Series and also did my last set of author photos.

We went for a little wander in the woods today to take some new author photos, as I felt an update was needed. I wore my beautiful new hand-carved fox pendant, and my angel wing scarf. We had fun taking over 400 photos, and before she left this afternoon, Liz transferred some of the pictures to my computer.

Out of all of them, there were a few favourites, and I wanted to share them here with you first! I may share some of the silly ones at some point too.

Michelle Gordon and the Epic Harry Potter Party

A year ago right now, I was getting the last-minute things ready for my Harry Potter theme party to celebrate turning 30. I had already sent out the invites by owl, had begun to turn the house into Hogwarts, and made a lot of chocolate frogs. Having done two other Harry Potter parties already by this point, one for my best friend, Liz Lockwood, and another for a very good friend, Annette, I already had many of the props and decorations. I created a site to house all the photos, called Lumos Parties. 

Despite the crazy weather on the day, we all had a great time, though the quidditch match was cut a little bit short!

It was great to see some friends I hadn’t seen in a while, and to drink butterbeer and eat Hagrid cake. My sister was a fantastic Professor Trelawney, and her readings really were quite accurate! (Which freaked a few people out!)

Anyway, just thought I would post a little gallery of my favourite photos, and the video I created of the day. Can’t quite believe it was a whole year ago though, will be 31 in a few days!

The Sliding Doors Effect

After someone mentioning the movie, Sliding Doors, over Christmas, I decided to watch it again, for the first time in many years, because I remembered enjoying it when I was younger. The idea that when we make a decision – or miss a train – that there is another version of us that splits off into a parallel universe that exists alongside the one we’re in, is actually not a completely crazy concept.

In The Elphite, my main character, Ellie, lives her life over and over, making different decisions in each lifetime which means that her life takes different pathways, though ultimately, keeps ending up the same way. The concept of fate and destiny and whether our lives are already written is fascinating to me, and that’s why it’s a feature in my books and is the theme of many of my favourite movies (like Deja Vu).

Just for fun, I thought it would be interesting to explore what my life would been like if I had made a different decision at a certain point in my life. The decision I have picked was the one I made to quit my degree at Lampeter University. If I had stayed at Uni, then in the second year, I would have lived in Ohio, and studied in a college there for the year. Which to be truthful, was the main reason for choosing that degree, because I had always wanted to live in America.

Perhaps while living and studying in America, I would have made connections with people there, maybe met an American guy or just very good friends. After returning to Wales and completing my third year, I might have then moved back to the US, and through my contacts, and with my shiny new degree, got myself a job over there, doing… erm… something… writing for a magazine maybe?

After living in Ohio for a while, I’m pretty sure I would have then looked to move to either the east or west coast, after all, I’ve never been very keen on living too far inland, and after spending some time in New York previously, I think I would have probably headed there.

Would I have been successful in New York? I’m not sure, I can only speculate. I would hope that I would have still discovered Nanowrimo, and still gone on to write novels, but I can safely say that none of my current books (apart from Heaven dot com, which I wrote when I was 16) would have existed in this parallel universe. Because everything that inspired them happened after 2005, when I started out in Lampeter Uni. I’m Here might have ended up existing, as it was inspired by events that happened in my short time at Lampeter, but it may have had a completely different twist to the end.

I did actually live in New York in 2008, perhaps I  passed my parallel universe self on the street without realising it?

It’s fun to imagine that there could be a parallel universe me, working for a magazine or in a publishing house in New York (which is entirely possible, as I have connections there that existed before 2004) but I am quite glad to be experiencing the reality I currently exist in.

If I had left Lampeter, but then actually completed the second degree I tried, in Derby University, then there could very well be a parallel universe me who is a fashion designer… now that, is a very scary concept!

What do you think your parallel universe selves are doing? Is there a big decision that you’ve made, and then wondered what would have happened if you’d chosen differently? It may not be the most productive use of your time, but it’s certainly a fun idea to explore. Perhaps it will inspire you to make changes, or just be grateful for your life and the way it turned out. Or perhaps you’ll just end up saying – Michelle is a complete nutter. However it works out, know that the reality you are experiencing is exactly the right one for you 🙂

 

 

My Top 5 Favourite TED Talks

I know this is a second top 5, but I really enjoyed doing the movie one yesterday, so I thought I would share my favourite TED Talks that I have watched several times.

I won’t go into detail about why I love each one, but I would encourage you to find some time to watch them, because they have inspired me so much. There are so many amazing bits of gold in them, and every time I watch them, I hear new things, I resonate with different things, and become even more inspired.

The following four ladies are most definitely ladies I would consider to be great role models. Their passion, their drive, and their ability to be vulnerable, honest and authentic on stage is incredible.

If someone gave me a cheque for twenty thousand pounds right now, I would pay off my debts, and then live off the remainder while I wrote my next two novels. Which is a really boring and sensible answer, but I think it’s what would make me the happiest! My fun answer would be that I would rent a shop in Brighton and open the first ever Earth Angel shop, filled with beautiful angel, faerie and mermaid gifts and books, and offer a safe space for Earth Angels to gather. Or even crazier than that, I would use it to buy a campervan, and travel around Europe, writing novels wherever I go!

Anyway, Angel

In preparation for creating the audiobook versions of the Visionary Collection, I was reading through Heaven dot com, and I realised that I hadn’t heard the song I mentioned in it – Anyway, Angel – for over ten years. The band who wrote the song, etcha, who are also mentioned in the book, was a band my brother played bass guitar in.

As a teenager I was basically their groupie, and I used to go to their practices and of course sit front row at all of their gigs, and even, on one occasion, sang the female parts of Pretty Fly for a White Guy on stage…

I have no idea why I am confessing these very embarrassing teenage stories here, I suppose I just started thinking about the times surrounding the writing of Heaven dot com. Part of me cannot believe it was fourteen years ago, and yet another part of me feels like it was a completely different lifetime.

The interesting thing is, that it was during my teenage years that I began channelling stories and poetry, even though at the time, I didn’t understand that was what I was doing. Years later I would find pages filled with words in my scrawl that I had no recollection of writing. I would find beginnings of stories I never finished and I would have no idea where the story had been heading or even what had inspired it. I also remember a story I started writing, that I think I may still have somewhere, about ghosts, and though I was doing well with it at first, I suddenly got a clear vision of how the story was going to end, and so I wrote the last chapter. What I learnt from that, is that I am very much a sequential writer – because though I loved the story, I had basically spoiled the ending for myself and now had no interest in writing the middle.

These days, if an idea for the ending comes up, I make notes, but I do not let myself write the ending, for fear that I will not write the middle. It has worked for me so far! It’s interesting how writing habits are developed, and the reasons why creative people do things in a certain way.
